The extra virgin, its name
A tribute to one of the symbolic mystical places of our territory: the Hermitage of Santa Illuminata.
The remains of a church and convent surrounded by greenery and a cave a few meters from them, where St. Francis fe rmed during one of his journeys.

Olfaction
Extra virgin olive oil tends to be yellow in color, fluid with light fruitiness and hint of green almond of light intensity.
Taste
From the taste characteristics, the hint of green almond is confirmed while the hint of bitterness is light and that of spiciness very light. Light fruity extra virgin oil with slight intensity of bitterness and spiciness, a simple and balanced oil.
Pairings
Excellent on white and red meats, fish and shellfish, pasta dishes, and raw and grilled vegetables.
